I was having lunch at Secret Recipe, Plaza Singapura yesterday and remembering what Sam Leong (the famed Tung Lok chef) said in a food show, decided to capture the following scene and post it up.
The red area is where prepared food is placed, before serving to customers. Note that the rubbish bin is just below, and there's a broom there. The green area is where unwashed dishes are placed
In addition, I had the (un)fortunate opportunity to witness one of the workers take out a bun from the oven / microwave and throw it over to his colleague, who then placed it on a plate, before serving it to a customer.
Are these practices hygienic and professional?
